    Walnut Rum Raisin Cheesecake

    1 cup of raisins
    2 tablespoons rum or water plus 1/2 teaspoon rum flavoring
    1 cup of graham cracker crumbs
    1/2 cup finely chopped walnuts
    1/4 cup sugar
    1/4 cup butter or margarine, melted
    3 (8-oz.) packages of cream cheese, softened
    1 (14 oz.) can sweetened condensed milk
    3 eggs
    Walnut Praline Glaze

    Preheat oven to 300 degrees

    In a small bowl combine raisins and rum, set aside.

    Combine graham cracker crumbs, nuts, sugar and butter, press firmly on bottom of springform pan or 13x9 inch baking pan.

    In large bowl, beat cream cheese until fluffy. Gradually beat in condensed milk until smooth. Add eggs mix well. Drain rum from raisins, stir rum into batter

    Pour into prepared pan. Top evenly with raisins. Bake 55 to 60 minutes or until center is set. Cool. Top with Walnut Praline Glaze

    Chill. Refrigerate leftovers.

    Walnut Praline Glaze


    In a small saucepan, combine 1/3 cup firmly packed dark brown sugar and 1/3 cup whipping cream. Cook and stir until sugar is dissolved. Bring to a boil, reduce heat and simmer 5 minutes or until thickened.

    Remove from heat, stir in 3/4 cup chopped toasted walnuts. Spoon over cake.


    If making the 13x9 size cheesecake, double glaze ingredients and simmer 10 to 12 minutes.
