    This is a very old recipe for a rich fruit cake, traditionally served to friends and relatives after a funeral in Wales.


    List of Ingredients




    cup plus 2 Tablespoons dark brown sugar
    8 ounces butter or margarine
    1/2 cup ground almonds
    3 eggs
    31/2 cups plain or all-purpose flour
    1 cup sultanans or golden raisins (lightly rolled in flour)
    1 cup currants (lightly rolled in flour)
    1/2 cup candied fruit if desired
    nutmeg
    allspice

    Recipe



    Put the sugar and butter in a saucepan with a tablespoon water and boil for 3 minutes

    Remove the saucepan from the heat and allow the contents to cool. Stir in the ground almonds, eggs, flour, sultanans, currants, fruit peel and a pinch of nutmeg and all spice.
    Pour the cake mixture into a 10 inch greased deep cake tin and bake in a reheated oven of 375 degrees for 11/2 hours. Teduce the heat to 350 degrees and cook for an additional 30 minutes.

    Remove the cake from the oven and turn it out onto a cake rack to cool and store in an airtight tin.
    Serve sliced along with a good hot cup of tea.
