    Wind Witch Carrot Cake

    List of Ingredients

    20-24 servings

    2 cups all purpose flour
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    3 eggs
    3/4 c vegetable oil
    3/4 c buttermilk
    2 c sugar
    2 tsp. vanilla extract
    1 8 oz can crushed pineapple drained
    2 cups grated carrots
    3-1/2 oz shredded coconut
    1 cup coarsely chopped walnuts (4 oz)

    Recipe

    Preheat oven to F 350.
    Grease 13 x 19 dish
    Sift flour, baking soda, cinnamon & salt.
    Beat eggs in a large bowl.
    Add oil, buttermilk, sugar and vanilla.
    Mix well.

    Add flour stuff, pineapple, carrots, coconut and walnuts.
    Stir well.
    Pour into dish.
    Bake 55 minutes.

    While cake is baking make glaze.
    Remove cake from oven and slowly pour glaze (recipe below) over hot cake.
    Cool for 15 minutes (turn out, if desired).
    Frost (recipe below) and chill till frosting is set. Can be refrigerated for several days.

    Buttermilk Glaze

    1 cup sugar
    1/2 cup buttermilk
    1 Tbls corn syrup
    1/2 tsp. baking soda
    1/4 LB butter
    1 tsp. vanilla

    Combine all ingredients, except vanilla. Boil. Cook for 5 minutes. Remove from heat; stir in vanilla.

    Cream Cheese Frosting

    1/4 LB butter, room temp
    1-8 oz pkg. cream cheese
    1 tsp. vanilla extract
    2 cups powdered sugar
    1 tsp. orange juice
    1 tsp. grated orange peel

    Cream butter and cream cheese until fluffy.
    Add vanilla, powdered sugar, orange juice, and orange peel.
