Zucchini Coconut Cake

List of Ingredients




2 cups grated zucchini
1 1/2 cups brown sugar
3 eggs
3/4 cup margarine
1/2 cup coconut
1 teaspoon vanilla
1/2 teaspoon almond flavoring
2 teaspoons cinnamon

Mix all ingredients in the order given, in a large bowl.
Combine in another bowl:

3 cups flour
6 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon

Add the above mixture to your zucchini mixture. Bake in a greased 9 by 12 inch pan at 350°F for 1 hour.
