Chicken Pie With Sweet Potato Crust

Chicken Pie
3 cups diced cooked chicken
1 cup diced cooked carrots
6 small white onions, cooked
1 tablespoon chopped fresh parsley
1 cup evaporated milk
1 cup chicken stock
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
Sweet Potato Crust
1 cup sifted flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup mashed sweet potatoes, cold
1/3 cup shortening, melted
1 egg, well beaten
Recipe
Preheat oven to 350 degrees. Lightly spray 4-quart casserole dish with nonstick cooking spray.
For pie, layer chicken, carrots, onions and parsley in prepared dish. In saucepan, combine evaporated milk and stock. Slowly add to flour in bowl, blending well. Return to saucepan. Cook until thickened, stirring constantly. Season with salt and pepper. Pour over pie layers.
For crust, sift together flour, baking powder and salt. Work in sweet potatoes, shortening and egg. Roll out 1/4 inch thick. Cover pie. Bake for 40 minutes, or until done.
Serving quantity: Serves 6 to 8.
