    READY in just 20 minutes, this zippy Cajun dish is absolutely delicious. Seasoned chicken
    pieces and sliced onions are simmered with kidney beans and stewed tomatoes to create
    this down-home favorite. Adding a dash of hot pepper sauce lets you turn up the heat!

    List of Ingredients




    1 package (about 1-114 pounds) Fresh Boneless Skinless Chicken Thighs or
    Breasts, cut into 1-Inch pieces
    2 teaspoons Cajun seasoning '0
    1 medium ONION, halved and sliced
    1 tablespoon vegetable oil
    1 can (16 ounces) red kidney beans, rinsed and drained
    1 can (14-112 ounces) stewed tomatoes, undrained
    4 cups hot cooked rice Hot pepper sauce, optional

    Recipe



    Sprinkle chicken with Cajun seasoning. In a large skillet over medium-high heat, cook
    chicken and onion in oil for 5 minutes, stirring frequently. Add beans and tomatoes. Bring to
    a boil. Reduce heat; cover and simmer 10 minutes or until flavors are blended and internal
    juices of chicken run clear. (Temperature should read 1800 for thighs, 1700 for breasts.)
    Serve chicken and beans over rice. Sprinkle with hot pepper sauce if desired. Yield: 4
    servings.
