Zucchini Provolone Plus

List of Ingredients
2 tablespoons olive oil
1 dozen fresh mushrooms, sliced
3 large green onions, sliced
1 clove garlic, minced
3 medium zucchini, sliced
3 medium yellow squash, sliced
salt and pepper, to taste
1 large tomato, sliced
1/4 pound Provolone cheese, sliced
1 dozen pitted black olives
1/4 cup grated Parmesan cheese
Recipe
Heat olive oil in large skillet, saute mushrooms, onions, and garlic 1 minute.
Add squash, saute 10 to 15 minutes. Add salt and pepper to taste.
Place tomato slices on top. Cover with slices of Provolone. Add olives and sprinkle Parmesan over all. Cover and simmer until cheese melts.
Servings: 4-6
