    Curry Mayonnaise

    ½ cup mayonnaise
    1 tablespoon chopped gingerroot preserved in syrup
    1 teaspoon grated onion
    2 teaspoons curry powder
    ½ teaspoon salt
    ½ cup whipping cream

    Salad

    3 cups chopped cooked chicken
    ¼ cup oil and vinegar salad dressing
    2 cups (1-inch) chunks fresh pineapple
    1 ½ cups chopped peeled apples
    1 ½ cups seedless grapes
    ¼ cup chutney
    ¼ cup chopped green bell pepper

    Recipe



    For the mayonnaise, combine the mayonnaise, gingerroot, onion, curry powder and salt in a bowl and mix well. Beat the whipping cream in a bowl until soft peaks form. Fold into the mayonnaise mixture. Chill, covered, in the refrigerator.

    For the salad, combine the chicken and salad dressing in a bowl and toss to mix well. Chill, covered, for 2 hours or longer.

    Add the pineapple, apples, grapes, chutney and bell pepper to the chicken and mix well. Fold in the curry mayonnaise. Chill, covered, for 2 hours or longer. Mound on a bed of lettuce to serve.

    You may substitute chopped cooked turkey for the chicken and one drained 16 ounce can pineapple chunks for the fresh pineapple.

    Serves six to eight
