    Ginger Chicken Salad

    4 cups diced white or dark meat chicken (or both)
    1/2 cup chopped sweet onion
    2 stalks of celery, chopped
    3/4 cup mayonaise
    1/4 cup fresh ginger, finely chopped (or 1/8 cup ginger seasoning)
    Salt and pepper to taste

    Recipe



    Combine all ingredients in a bowl. Add more mayonaise and ginger to suit your taste, if needed. Chill for 2 hours or refrigerate overnight. Serve on a bed of romaine with cracked wheat crackers, or in a croissant with lettuce and tomato.
