    Golden Raspberry Chipotle Chicken

    ½ C. Raspberry Jam
    4 skinless, boneless chicken breast halves
    salt and pepper to taste
    ¼ C. all-purpose flour
    1 Tbsp. olive oil
    2 Tbsp. butter
    1 Tbsp. Chipotle
    ¼ tsp. cayenne
    1/3 C. low-sodium chicken broth
    1 Tbsp. cornstarch
    zest of one orange
    2 Tbsp. sliced green onion tops

    Preparation:
    Microwave jam until liquid, about 2 minutes. Pour jam into fine sieve over small bowl. Using back of spoon, press seeds on sides of sieve to extract as much liquid as possible; set aside

    Season chicken breasts with salt and pepper. Dredge in flour, shaking excess flour off; set aside.

    Heat oil and butter in large skillet over medium-high heat. When hot, add chicken breasts and sauté 3 to 4 minutes per side. Transfer chicken to plate and cover to keep warm.

    In small bowl combine broth and cornstarch; set aside. Pour reserved jam into skillet and stir in chipotle and cayenne. Whisk in broth mixture; stirring until thickened.

    Return chicken to skillet, cover and simmer over low heat 10 minutes or until chicken is no longer pink in center.

    Transfer chicken to serving platter, spoon raspberry sauce over. Sprinkle with orange zest and green onion tops.
