    8 oz. beef tenderloin
    Ponzu Sauce
    Ingredients:
    7 oz. citrus vinegar mix
    3 oz. mirin
    3 oz. soy sauce
    3 oz. sake
    7 oz. orange juice
    1 oz. balsomic vinegar
    1/2 tsp. lime juice
    1/2 tsp. lemon juice

    Recipe



    Garlic slices fried in extra virgin olive oil. Trim the tenderloin and marinate in garlic olive oil with seasonings.Lightly grill the tenderloin then freeze it. Take frozen beef and slice into eight thin pieces for the serving. Plate the tenderloiun with the ponzu sauce and sprinkle with the roasted garlic on a bed of mescaline greens. Garnish with spicy mayo and avacado sauce.
