    Oyster Sauce Steamed Fish

    1/2 pound flounder or sole fillets, cut in 2 pieces
    2 1/2 tablespoons Chinese rice wine or dry sherry
    2 tablespoons oyster sauce
    1 tablespoon grated ginger
    1/2 teaspoon sugar

    Place fish on a heatproof platter. Combine remaining ingredients and pour over fish. Place in a steamer over boiling water and steam until fish flakes (8 to 10 minutes per inch of thickness).
