    6 eggwhites
    400g caster sugar
    pinch cream of tartar
    pinch cornflour
    2 teaspoons white vinegar or lemon juice
    300mls thick fresh cream
    juice and seeds of 3-4 passionfruit
    250g fresh summer berries

    Combine the egg whites in a large bowl and beat until frothy and soft peaks form. Add the cream of tartar, cornflour and caster sugar a little at a time and continue to beat until stiff. Fold in the vinegar or lemon juice. Line a baking sheet with a square of damp Glad Bake paper. Using a spatula, spread the egg white mixture onto the paper in a round formation. Flatten the top and smooth the sides. Bake in a preheated oven at 120 degrees C until the outside is crisp and the centre is just beginning to set. This will take about one and a half hours. Remove from the oven and allow to cool on an attractive serving platter. For the filling, beat the cream until soft peaks form. Spoon the cream over the top of the pavlova and spread it with a spatula. Spoon the passionfruit juice and seeds evenly over the cream. Decorate with a scattering of beautiful summer berries. Serves 8.
