    Poke 'n Pour Ginger Cake

    2-1/4 cups all purpose flour
    3/4 cup packed brown sugar
    1 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    2 tsp cinnamon
    1 tsp ginger
    1/2 tsp mace or nutmeg
    1/4 tsp cloves
    3/4 cup light molasses (or sorghum)
    3/4 cup cooking oil
    3/4 cup water
    2 eggs

    Topping
    1 cup packed brown sugar
    1/2 cup margarine
    1/3 cup water

    Recipe



    Preheat oven to 350°
    Using shortening or margarine, grease and flour 12 cup tube pan (grease non-stick too)
    In large bowl, combine all cake ingredients
    Blend at low speed until moistened
    Beat 3 minutes at medium speed (if using hand-held portable electric mixer, use high speed)
    Pour into pan
    Bake 50 to 60 minutes or until cake tests done
    Remove from oven, prick deeply with fork every inch
    In small saucepan, heat topping ingredients until butter is melted
    Spoon hot topping over cake
    Cool upright in pan 30 minutes, then turn onto serving plate
    Serve warm or cold
