    6 ozs dried tart cherries
    1 cup Madeira
    14 slices day old dense-textured white bread, toasted and torn into small pieces (about 8 cups
    1 1/2 cups toasted pecan pieces
    1/2 cup (1 stick) unsalted butter
    1 cup finely chopped onion
    1 cup finely chopped celery
    1/2 cup finely chopped shallots
    3 crisp apples, peeled and coarsely chopped
    1/2 cup golden raisins
    1/2 cup finely chopped flat-leaf (Italian) parsley
    2 tsp dried tarragon, crumbled
    1 tsp dried thyme
    10 to 12 dried sage leaves, crumbled
    1 tsp salt, or to taste
    1 tsp freshly ground pepper, or to taste

    In a small bowl, soak the cherries in the Madeira for several hours or overnight.
    In a large bowl, combine the bread pieces with the pecans. Drain the cherries, reserving the Madeira, and add them to the bread mixture.

    Melt the butter in a large skillet. Sauté the onion, celery, and shallots until the vegetables are softened, then add to the bread mixture. Add the apples, raisins, parsley, tarragon, thyme, sage, salt, pepper, and the reserved Madeira; toss the stuffing well. Cool, then stuff bird as usual.

    Note: Makes enough for an 18 lb. turkey
