    Surprise Pecan Pie

    Prepare a pie crust, unbaked.*

    Filling:
    1 8oz. pkg. cream cheese softened
    1 egg
    1 tsp. vanilla
    1/3 cup sugar
    1/4 tsp. salt
    3 eggs
    1/4 cup granulated sugar
    1 cup corn syrup
    1 tsp. vanilla
    1 1/4 cups. pecan pieces or halves

    Heat oven to 365 degrees (it calls for 375, but it gets a little brown too soon so if you can set it for 365 instead that will save you some watching.) In a small bowl, combine cream cheese, 1 egg, 1 tsp. vanilla, 1/3 cup sugar and salt. Beat until smooth and well blended. Set aside.

    In another bowl, beat 3 eggs, stir in 1/4 cup sugar, corn syrup, and 1 tsp. vanilla. Blend well.

    Spread cream cheese mixture in bottom of crust-lined pan. Sprinkle with pecans. Gently, pour corn syrup mixture over pecans. Bake for 35 to 45 minutes or until center is set. Cover edge of pie crust with strip of foil after about 20 minutes, to prevent excessive browning.

    *Pie Crust:
    1 cup shortning
    2 1/2 cups flour
    1 tbls. sugar (optional)
    1 1/2 tsp. salt
    1 egg
    about 2/3 cup milk

    Cut shortning into flour, salt, (sugar if wanted) until it is pea size pieces. (Add up to 1/4 cup flour extra if needed.)

    In a measuring cup, break egg and add enough milk to make 2/3 cup. Beat with fork and add enough of this mixture to hold mixture together. DO NOT OVER MIX!! Roll between wax paper. Can be frozen until needed.

    If you really want to make a pie, without making the crust, if you can find "Marie Callender" crusts (in the freezer section) they are almost as good as homemade.
