    2 cups wild rice
    4 tablespoons unsalted butter
    1 medium onion, finely chopped, about 1 cup
    1 tablespoon thyme leaves
    3/4 cup dried cranberries
    1 cup chicken stock
    2 teaspoons Kosher salt
    1/2 teaspoon cracked black pepper

    1. Rinse wild rice and drain.

    2. In a large sauce-pan, combine rice, 1 teaspoon salt with 8 cups water, and bring to a boil over high heat. Reduce heat, cover and simmer until wild rice is tender and some grains have popped, 45 to 55 minutes. Drain any excess water if needed.

    3. Meanwhile, heat butter in a large skillet over medium heat until melted and bubbly. Add onion and cook until golden brown, about 6 to 7 minutes. Add thyme, cranberries and stock, and bring to a boil. Reduce the stock to half. Add to the wild rice and season with the remaining salt and pepper.
