    2 Cups cooked, mashed Sweet Potatoes
    1 Cup firmly-packed Brown Sugar
    1/2 Cup Butter or Margarine (softened)
    2 Eggs (separated)
    1/2 Teaspoon Ground Ginger
    1/2 Teaspoon Ground Cinnamon
    1/2 Teaspoon Ground Nutmeg
    1/4 Teaspoon Salt
    1/2 Cup Evaporated Milk
    1/4 Cup Sugar
    1 Unbaked 10-inch Pie Shell
    Whipped Topping (optional

    Combine sweet potatoes, brown sugar, butter, egg yolks, spices, and salt in a large mixing bowl. Beat until light and fluffy. Add evaporated milk. Beat until just blended.

    Beat egg whites (at room temperature) until foamy. Gradually add sugar, 1 tablespoon at a time, beating until stiff peaks form. Fold into potato mixture.

    Pour filling into pie shell. Bake at 400-degrees Fahrenheit for 10 minutes. Reduce heat to 350-degrees F and bake an additional 45 to 50 minutes or until set. Cool.

    Top with dollops of whipped topping, if desired.

    NOTE: You can substitute an equal amount of cooked, mashed pumpkin for sweet potatoes.
