    Glazed Sweet Potatoes and Apples

    6 meduim sweet potatoes (3 1/2 lbs.)
    Boiling water
    Salt
    3/4 c. butter or margarine
    1 c. light or dark-brown sugar, packed
    1 1/2 c. orange juice
    2 TBSP. coarsely grated orange peel
    2 large tart apples, pared and sliced 1/4 inch thick

    Scrub potatoes well. Place in large saucepan. Cover with boiling water; add 1 teaspoon salt.
    Bring to boiling; reduce heat, and simmer, covered 25 minutes, or until tender. Drain; let cool. Peel; slice crosswise in 1/2-inch thick slices. Preheat oven to 400°F.
    In medium skillet, melt butter. Add brown sugar, orange juice, orange peel and 1/4 teaspoon salt; bring to boiling, stirring until sugar is dissolved. Simmer, uncovered, 10 minutes, or until thick and syrupy. Add apple slices; simmer, uncovered, 5 minutes, or just until tender. With slotted spoon, remove apple slices; set aside.
    In 2-quart oval, shallow baking dish, alternate potato and apple slices in rows. Spoon half of syrup evenly over sweet potato and apple. Bake, covered with foil, 25 minutes.
    Remove foil; baste with remaining syrup. Bake, uncovered, 15 to 20 minutes, or until glazed.

    Serves: 8
