    1 cup sugar
    2 1/2 cups all purpose flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup chopped pecans
    2 teaspoons grated orange rind
    2 eggs
    3/4 cup orange juice
    1/2 cup mayonnaise
    1 1/2 cups fresh cranberries (see notes below)
    2 Tbsp. sugar (for top)
    1/2 teaspoon grated orange rind (for top)

    Recipe



    Preheat oven to 350°F. Grease and flour 9x5x3-inch loaf pan.

    Hand mix sugar, flour, soda, and baking powder in a large bowl.
    Add pecans and 2 teaspoons orange rind.

    In another bowl, mix egg, orange juice and mayonnaise well. Stir into dry ingredients just until moistened. Then add cranberries.

    Spoon into loaf pan. Sprinkle top with 2 TBS sugar and 1/2 teaspoon grated orange rind.

    Bake for 55 minutes. Cover with foil and bake for 10 minutes more. Cool on wire rack.

    NOTES from Wilma: I wrap the baked breads in plastic wrap, then foil, then tie a yarn ribbon around & freeze them. This is gorgeous when sliced! It looks like stained glass.

    You can use canned cranberry sauce or just buy and pitch fresh cranberries in the freezer. Then when you get ready to use them just run cold water over them in a colander to quickly thaw them. Take some (just a handful) of the cranberries and crush them. That will make the bread a little bit pink. It is not all that sweet, which is just about right with coffee in the morning.
