    Rich in butter, lemon and eggs and a dash of rum.

    List of Ingredients




    1/2 teaspoon salt
    2 teaspoons baking powder
    3 cups flour
    1 cup (1/2 pound) unsalted butter
    1 1/4 cups sugar
    1 whole egg
    2 egg yolks
    1 tablespoon rum
    1 tablespoon lemon juice
    Grated rind of 1 lemon
    1/3 cup minced pine nuts or unsalted pistachios

    Sift salt, baking powder and flour together into a wide bowl. Using two knives or a pastry blender, cut in butter until mixture resembles coarse meal. Beat sugar with whole egg, yolks and lemon rind, juice and rum. Add with nuts to flour mixture. Mix until dough is firm. Knead lightly for 1 or 2 minutes, wrap in waxed paper and chill for 1 hour. Divide dough in half and roll each half out to 1/4-inch thickness. Cut into Christmas shapes with cookie cutters. Arrange on unbuttered baking sheets and bake in preheated 425 degrees F. oven for 10 minutes, or until light golden brown. Cool completely and decorate with colored icing.
    Makes about 3 dozen cookies.

    VARIATIONS: This dough is often tinted with a few drops of food coloring. If you like, you can brush the shaped cookies with egg yolk beaten with 1 tablespoon water, then sprinkle with colored sugar, or sugar sprinkles, before baking.
