    This loaf will taste even better the next day.

    List of Ingredients




    1/2 cup vegetable oil
    1 cup granulated sugar
    2 eggs
    1 1/2 cups grated carrot
    1/3 cup water
    2 cups all-purpose flour
    2 1/2 tsp baking powder
    1/2 tsp baking soda
    1/2 tsp salt
    1/2 tsp cinnamon
    1/2 tsp cloves
    3/4 cup dried cranberries
    1/3 cup chopped walnuts

    Recipe



    In a medium bowl, combine oil, sugar and eggs; beat until light and fluffy. Add carrot and water; mix thoroughly. In another mixing bowl, combine dry ingredients; add to creamed mixture; stir well. Stir in dried cranberries and walnuts. Spoon batter into a 9 x 5-inch loaf pan greased only on the bottom. Bake at 350° F 60 minutes or until wooden pick inserted in centre comes out clean. Cool in pan 10 minutes; remove and let cool completely.

    Makes one loaf.

    Tip: To keep nuts or fruit from sinking to the bottom of the batter, toss them in flour or sugar first.
