    2 eggs, beaten
    2/3 cup vegetable oil
    2 teaspoons vanilla extract
    1 teaspoon grated lemon rind
    3/4 cup sugar
    2 cups all purpose flour
    2 teaspoons baking powder
    1/2 teaspoon salt

    Recipe



    Combine eggs, oil, vanilla, and lemon rind in a large mixing bowl; add sugar, stirring until well blended.

    Combine flour, baking powder, and salt in a medium mixing bowl; add to egg mixture, stirring well.

    Drop dough by teaspoonfuls 2 inches apart onto ungreased cookie sheets. Flatten cookies with greased bottom of a glass dipped in sugar. Bake at 400 Degrees F. for 8 to 10 minutes or until lightly browned.

    Remove immediately from cookie sheets, and cool on wire racks. Store in airtight containers. Yeilds 3 dozen cookies.
