    Stockbridge Christmas Sweet Potatoes

    5 pounds sweet potatoes, peeled and cut into 2-inch pieces
    1 cup (2 sticks) unsalted butter
    1 1/2 cups fresh orange juice
    1 cup brown sugar
    2 teaspoons cinnamon
    1 teaspoon sea salt
    1/2 cup brown sugar
    1 cup pecan pieces
    2 cups miniature marshmallows

    Recipe



    Place the potatoes in a large saucepan. Add enough cold water to measure 1 inch above potatoes. Bring to a boil. Reduce the heat to medium and cook for 15 minutes or until tender.

    Heat the butter, orange juice and 1 cup brown sugar in a saucepan over low heat; do not boil. Drain the potatoes. Add the butter mixture to the potatoes and mash together. Stir in the cinnamon and sea salt. Soon into a 7X11 baking dish. Sprinkle 1/2 cup brown sugar and the pecans over the potato mixture.

    Arrange the marshmallows in a single layer over the top. Bake at 350 degrees for 20 minutes or until the top is lightly browned and the potatoes are hot.
