1 cup margarine, softened
1/2 cup sugar
1 egg, separated
1 tsp vanilla
1/8 tsp salt
2 cups flour
1 cup chopped nuts
preserves- strawberry, cherry, apricot, etc.
Recipe
Beat margarine and sugar until light and fluffy. Blend in egg yolk, vanilla, and salt. Add flour, mix well. Beat egg whites until frothy. Shape level tablespoons of dough into balls. Dip balls into egg whites. Roll in nuts. Place on ungreased cookie sheet. Flatten slightly, indent centers. Fill center with preserves. Bake at 375, 10-12 minutes or until lightly browned.
Makes about 3 dozen.
