    Chocolate Amaretto Butter Cookies

    1 cup (2 sticks)Unsalted Butter, room temperature
    1 cup sugar
    ¼ teaspoon salt
    1 egg, separated
    1½ Tablespoons Amaretto liqueur (or 1 teaspoon almond extract + 1 Tablespoon water)
    2 ounces unsweetened baking chocolate
    2 cups all-purpose flour
    ¾ cup sliced almonds

    Preheat oven to 300°F. Melt and cool the chocolate to room temperature. Cream butter and sugar in a mixing bowl. Add salt, egg yolk, Amaretto and chocolate; beat until blended. Gradually blend in flour. Spread and pat the dough evenly into the bottom of an ungreased 10" x 15" jelly roll pan or shallow baking pan. Beat the egg white just until foamy; spread or brush it evenly over dough. Sprinkle with almonds. Bake for about 30 minutes or until set (don’t overbake). Let cool for 5 minutes and then cut into 2-inch squares.

    Yield: About 40 squares.
