Double Lemon Poppyseed Cookies

1 pkg. lemon cake mix with pudding
1 (3.4-oz.) pkg. instant lemon pudding
1 T. lemon zest
2 T. poppy seeds
1/2 cup vegetable oil
3 eggs, slightly beaten
Recipe
In a large mixing bowl, combine all ingredients. Beat with electric mixer on low speed until well blended. Drop by tablespoons, 2 inches apart, onto ungreased cookie sheets. Bake at 350 degrees for 12 to 15 minutes, until lightly browned. Cool 1 minute before removing to cooling racks. Makes 2 1/2 dozen cookies.
