Felix Unger's Peanut Butter Cookies

1/2 cup butter
1/2 cup lard
1 cup peanut butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 tsp vanilla
2 c cake flour -- (or 2 1/2 cups)
1 tsp. baking soda
1/2 tsp. salt
Recipe
Cream butter, lard, peanut butter, and sugars together.Add eggs and vanilla and beat until combined. Sift flour, soda, and salt together and add to above mixture. Shape dough into a flat disk and wrap in waxed paper. chill for at least 1 hour. Shape dough into large balls (golf ball sized) and place on parchment-lined cookie sheets. The cookies spread out and become fairly flat, so leave room between the balls. Bake at 350 for 13 - 15 minutes or until lightly browned around the edges. The centers may seem a bit underdone at this point, but they will firm up. Let cookies cool on the pan 5 minutes before transferring to a wire rack to cool completely.
Makes 30 cookies.
