    1 cup butter or margarine, softened
    1 (8 oz) pkg cream cheese, softened
    2 1/2 cups plus 2 tbsp flour
    1 cup chopped macadamia nuts, divided
    3 eggs, beaten
    1 1/2 cups firmly packed brown sugar
    1/2 cup shredded coconut
    1 tsp baking powder

    Preheat oven to 350 degrees F. Grease a muffin tin.

    Cream butter and cream cheese together.

    Gradually add 2 1/2 cups flour, beating until well blended. Shape dough into 1-inch balls.

    Pat balls into prepared muffin tins, shaping into shells. Sprinkle 1/2 cup of the chopped nuts evenly inside the shells.

    In a medium mixing bowl, combine eggs and brown sugar; mix well. Stir in remaining 1/2 cup chopped nuts, coconut, remaining 2 tbsp flour, and the baking powder. Pour mixture evenly into shells, filling half full.

    Bake at 350 degrees for 15-18 minutes.

    Reduce heat to 250 degrees and bake for 10 more minutes.

    Yield: 3 dozen
