In a large bowl sift together:
2 cups all purpose flour
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
¾ teaspoon cinnamon
¼ teaspoon cardamom
½ teaspoon salt
In your Kitchen Aid Mixer add:
2 sticks of soften butter
¼ cup buttermilk
¾ cup white sugar
¾ cup brown sugar (either light or dark)
Cream well until fluffy.
Add: 2 large eggs and 2 teaspoons of vanilla (the real thing here)
Once the above is well incorporated, preheat your oven to 350.
Now add in the sifted items into the mixer and 1 ½ cups old fashion oatmeal. Mix on low till moist and remove the bowl from the stand.. and by hand stir in:
1 cup toasted coconut flakes
1 bag of the larger semisweet morsels (the bigger ones please)
1 cup of dry roasted peanuts (yep you can use the sweeten dry roasted ones too here)

Mix well and scoop out using an ice cream scoop and place on a parchment lined cookie sheet. 3 cookies per row and usually 9 to 12 per sheet, depending upon the size of your cookie sheet. Dust with powder sugar and slightly flatten with a glass that is flat on the bottom.. and use glass please.. (hint, chill the glass while mixing and rechill it after the first use of cookie smashing / flattening or have a few in the freezer for the next batch)
Bake for 13 – 15 minutes, the edges should be slightly brown and cool on the sheet for 5 minutes or so.. if you can wait that long.
