Peanut Butter Macaroons

• 1/4 cup Peanut Butter
• 2 egg whites
• 1/2 teaspoon vanilla
• Dash salt
• 2/3 cup sugar
• 3 1/2-ounce can (1 1/3 cups) flaked coconut
Recipe
• Preheat oven to 325ºF.
• In saucepan, melt Jif over very low heat; cool slightly.
• Beat egg whites, vanilla, and salt till soft peaks form. Gradually add sugar, beating till stiff peaks form.
• Fold in coconut and melted peanut butter.
• Drop by rounded teaspoonfuls onto greased cookie sheet.
• Bake in 325ºF oven for 20 minutes.
• Let stand 1 minute; remove to rack. Cool.
• Makes 2 1/2 dozen
