    2 boxes of fudge brownie mix
    1 container of cookies and cream frosting
    (you can use extra virgin olive
    oil and egg substitute for egg and
    oil ingredients in brownie mix)

    Prepare both brownie mixes separately. Chill frosting in the fridge so it''s slightly stiff. Remove brownie cake from each pan in one piece, and let them cool. Turn one cake layer upside down, leaving spongy side up. Spread frosting on spongy side using the whole container. Place the other brownie cake layer, spongy side down, on top of the frosted layer and press together slightly. Further chilling time in the fridge may help in cutting.

    Yield: Makes about 20 pieces using a 9"x9" baking pan.
