    Triple Chocolate Decadence Cookies

    1/2 cup flour
    1/4 teaspoon salt
    1/2 teaspoon baking powder
    2 ounces unsweetened baking chocolate
    3/4 cup semisweet chocolate chips
    3 tablespoons butter
    2 tablespoons double strength coffee (or espresso), cooled
    1 tablespoon chocolate syrup
    1/2 cup egg substitute
    2/3 cup sugar
    2 teaspoon vanilla extract
    1/2 cup white chocolate chips
    3/4 cup-1 cup pecan pieces (toasted if desired)

    Preheat oven to 350-degrees. Line 2 thick baking sheets or baking stones with parchment paper; set aside. (If you don't have parchment paper, spray sheets with canola cooking spray. It will still work out--the cookies just tend to spread out more).

    Add flour, baking powder and salt to 2 cup measure and stir to blend; set aside.

    Place baking chocolate, 3/4 cup semisweet chocolate chips, butter, coffee and chocolate syrup in medium sized microwave-safe bowl. Heat on HIGH for 2 minutes and stir to blend and finish melting chocolate. Heat 30 seconds or more if needed to completely melt chocolate. Set aside to cool.

    Add egg substitute, sugar, and vanilla to mixing bowl and beat with electric mixer on high speed for two minutes. Reduce to low speed and beat in the chocolate mixture just until combined.

    Gently fold in the flour mixture with a rubber spatula then stir in the white chocolate chips and pecans. (The mixture will be very loose.)

    With a cookie scoop (or small ice cream scoop) scoop the mixture onto the prepared pans. Bake for about 8 minutes (until the service of the cookie is dry (do not overcook). Let cool on the baking sheets then peel cookies off of parchment. Store in an airtight container.

    Makes 24 cookies
