    3 strips bacon, diced
    1 C. chopped onion
    2 pounds sauerkraut,
    rinsed and drained
    1 (12oz.) beer
    2 T. brown sugar, packed
    1/2 tsp. caraway seeds
    Pepper to taste
    1 C. coarsely shredded carrots

    Recipe



    Fry bacon in 2-quart saucepan until crisp. Remove, drain, and set aside. Add onions to pan and saute': stir in sauerkraut, beer, sugar, caraway seeds, and pepper. Bring to a boil, cover, and simmer for one hour. Add carrots and simmer uncovered for an additional 20 minutes, until carrots are tender. Garnish with bacon pieces.
