    Celery & Potato Salad with Lemon Mayo

    1 1/2 cups diced celery
    1 pound new potatoes, skin on
    1 tbsp grated lemon peel
    3/4 cup real mayonnaise
    1/2 cup minced onions
    1/4 cup minced red bell peppers
    1/4 cup sweet pickle relish
    salt and black pepper to taste

    Quarter potatoes and boil in lightly-salted water until tender but not
    falling apart. Drain and rinse under cold water. In a large mixing bowl,
    combine celery, lemon peel, mayo, onions, bell peppers and relish. Using
    a wooden spoon, stir until ingredients are well blended. Drain potatoes
    thoroughly and add to mixture. Continue to blend, being careful not to
    break potatoes. Season with salt and pepper. Cover, refrigerate and
    allow potatoes to marinate in lemon dressing a minimum of 4 hours before
    serving. Makes 6 servings.
