    Grilled Scallops w/Lime-Ginger Dressing

    2 lbs. Large Scallops
    1/3 cup Fresh Lime Juice
    1/4 cup Olive Oil
    2 tsp. Ginger, minced
    1 Garlic Clove, minced
    Salt and pepper to taste

    Recipe



    Place the scallops in a glass or ceramic bowl. Combine the remaining ingredients and pour them over the scallops. Let rest for about 1 hour. Thread the scallops onto skewers horizontally so that they lie flat.

    Grill 4 to 6 inches away from the coals for about 6 to 8 minutes, turning them occasionally and brushing them with some of the marinade.
