    Lou Pember's Favorite Potato Salad

    2 pounds new potatoes
    1/2 cup sour cream (reduced fat okay)
    1/4 cup mayonnaise (light okay)
    3 tablespoons distilled white vinegar
    1 tablespoon water
    2 or 3 green onions, thinly sliced
    2 tablespoons chopped fresh parsley
    1/2 teaspoon salt 1/4 teaspoon fresly ground pepper

    In a small dutch oven cover potatoes with cold water. Bring to a boil. Reduce heat and simmer until tender-crisp, about 20 to 25 minutes. Drain and set aside until cool. In a medium bowl combine remaining ingredients. Peel potatoes; cut into 1/2-inch slices. While still warm, toss with dressing. Makes 6 servings
