    small carton of clean button mushrooms
    1 small to medium zucchini
    1 or 2 small yellow squash (the tiny kind you can cut up and sauté easily)
    1 large red or Spanish onion
    1 green pepper
    1 red or yellow pepper
    1/4 cup sesame oil
    2 Tbsp. sesame seeds
    bamboo skewers

    Recipe



    Cut the zucchini, squash, onion, and peppers into large chunks. Cut any extra-large mushrooms into smaller chunks. Thread the vegetables and mushrooms onto the bamboo skewers, alternating different types of veggies on
    each skewer. Mix sesame oil and sesame seeds in a small bowl. Brush lightly onto the veggies. Grill or broil the skewered vegetables, turning periodically until they are lightly browned. Serve them hot with any kind of main dish or over rice. They also make a really yummy light main course for the hottest summer days. Best of all, your kids will eat them!
