    1/2 cup chopped onions
    1/2 cup fresh lemon juice
    1/4 cup extra-virgin olive oil
    2 garlic cloves, chopped
    1 tablespoon dried oregano
    1/2 teaspoon salt
    1/4 teaspoon fresh-ground black pepper
    2 pounds center-cut boneless pork loin, fat trimmed and meat cut into 1-1/2-inch cubes

    Puree onions with lemon juice, oil, garlic, oregano, salt and pepper in a blender or a food processor fitted with metal blade. Pour into a zip-seal plastic bag and add pork cubes. Refrigerate while you prepare fire or up to 24 hours.

    Preheat a gas or charcoal grill. Thread meat onto skewers, leaving a little space between cubes. Lightly oil grill. Grill skewers, turning occasionally, 10 to 12 minutes until meat is well browned and looks barely pink in center when prodded with a sharp knife. Remove pork from skewers and serve hot. Makes 4 to 6 servings.
