    Steak with Sky Ranch Steak Glaze

    6 beef top-loin or shell steaks, cut 1-inch thick
    6 ounces Roquefort or other blue cheese, softened
    6 tablespoons butter, softened
    6 tablespoons grated onion
    2 tablespoons Worcestershire sauce
    1 tablespoon fresh lemon juice
    1 tablespoon salt
    2 teaspoons pepper
    Tabasco sauce

    To make the glaze, combine and cream together the cheese, butter, grated onion, Worcestershire sauce, lemon juice, salt, pepper and Tabasco sauce to taste.

    Grill the steaks over coals until they are done to your taste - about 7 minutes for rare.

    Immediately spread the glaze on one side of the steaks at a time, and grill the steaks for 5 seconds longer on each side, or just enough to make the cheese-butter mixture start to sizzle.

    Serves 6
