    About 4 to 5 Pounds of Potatoes
    1 Large Onion (chopped)
    1 Large Green Bell Pepper (chopped)
    3 Large Ribs of Celery (chopped)
    Parsley (Lots! Either freshly chopped, or dried flakes)
    Garlic Powder (to taste - start with a teaspoonful)
    Salt and Pepper (to taste)
    Salt and Pepper (to taste)
    Mayonnaise (enough to moisten, but not overload)
    2 (heaping) Teaspoons of Chow-Chow (or prepared yellow mustard)
    2 (heaping) Teaspoons of Sweet Pickle Relish
    6 Hard-boiled Eggs (shelled and sliced)

    Peel potatoes and boil in a large pot (or Dutch oven) just until tender. Drain and cool. (Putting the potatoes back into the colander and the colander back into the pot and then letting them cool off under running water helps to cool them faster). Drain until the potatoes are fairly dried off.

    While potatoes are boiling, chop the Onion, Bell Pepper, Celery, Parsley, and Hard-boiled Eggs.

    Slice the potatoes (into chunks) into a large bowl. Add the chopped Onion, Bell Pepper, Celery, Parsley, and Hard-boiled Eggs. Season with Salt, Pepper, and Garlic Powder.

    Put 4 or 5 good dollops of Mayonnaise on top. Add the Chow-Chow (or mustard) and Sweet Relish, and mix that into the Mayonnaise.

    Fold the Mayonnaise into the rest of the ingredients, trying not to smash the potatoes too much.

    Garnish with a few reserved egg slices, Paprika
