    Warm Potato Salad with Beer Dressing

    5 pounds red potatoes, unpeeled
    1 cup finely chopped mild onions
    1/2 cup finely chopped parsley
    Beer dressing (recipe follows)
    4 Tablespoons chopped chives

    Recipe



    FOR THE SALAD:
    Cook potatoes in boiling, salted water until tender, 20-25 minutes.

    Remove and slice into 1/4-inch rounds. While still warm, gently mix with the onions, parsley and beer dressing. Do not over mix. Garnish with chopped chives.

    BEER DRESSING:
    3/4 cup olive oil, divided
    1 cup finely chopped onion
    1 1/2 cup lager
    6 Tablespoons malt or cider vinegar
    1 teaspoon sugar
    2 Tablespoons Dijon mustard
    Salt and pepper

    FOR THE DRESSING:
    Heat 1/4 cup of the olive oil in a small frying pan over medium heat. Add onions, cook until just soft, 5 minutes.

    Add lager, vinegar and sugar and boil for 5 minutes.

    Put in a food processor with mustard. While mixing, pour in remaining 1/2 cup olive oil. Taste for salt and pepper.
