    1/4 Cup Minute Tapioca
    1/2 Cup sugar
    1/4 tsp. salt
    2 squares Baker's Unsweetened chocolate, cut in pieces
    2 egg yolks
    4 Cups milk
    1 tsp. vanilla
    2 egg whites
    4 Tbsp. sugar
    1/4 Cup Baker's coconut, premium shred

    Recipe



    Combine tapioca, sugar, salt, chocolate, yolks and milk in to of double boiler; stir enough to break yolks
    Place over rapidly boiling water, bring to scalding point (5-7 minutes) and cook 5 minutes, stirring frequently
    Remove from boiling water and add vanilla
    Turn into greased baking dish
    Beat egg white till foamy; add sugar 2 Tbsp. at a time, beating after each addition until thoroughly blended
    Continue beating till it forms peaks
    Pile lightly on pudding; sprinkle with coconut
    Bake at 350º 15 minutes or till delicately brown
    Serves 8
