    0.5 cup Extra Virgin Olive Oil
    4 tablespoons Dutch-processed Cocoa
    1 cup brown sugar, firmly packed
    3 egg whites
    1 teaspoon vanilla extract
    1 cup nuts, chopped (optional)
    1 cup all-purpose, unbleached flour, sifted
    0.5 cup favorite chocolate morsels

    Recipe



    Preheat oven to 325 degrees. Use about a teaspoon of the olive oil to grease an 8 x 8 inch baking dish. In a mixing bowl combine cocoa, brown sugar, egg whites, remaining olive oil and vanilla, stirring with a wooden spoon until smooth. Blend in the flour, and then the nuts. Pour batter into pan. Sprinkle chocolate pieces evenly over the surface of the batter. Bake for 25-30, or until a tester comes out clean. Cool to room temperature on a rack before cutting into squares of desired size.

    Note: Dr. Stampfer advises that the recipe may be doubled, and that the brownies freeze well. This is all too good to be true.
