    8 small apples, preferably baking, red
    1 teaspoon cinnamon
    1/4 teaspoon nutmeg
    1 cup sugar
    4 tablespoons butter

    On lightly floured board, roll pastry 1/8 inch thick. Cut in 5 inch circles.

    Peel and core apples saving the peelings. Place 2 inches apart in greased pan. Combine cinnamon, nutmeg and sugar; divide mixture and put into centers of apples. Dot with butter.

    Fit pastry circle over each apple, barely tucking it under. Prick pastry in several places. Bake in very hot oven, 450 degrees about 25 minutes. Remove from oven.

    Meanwhile, place apple peelings in saucepan, cover with 3 1/2 cups water, and cook until soft. Strain through colander, reserving juice to make sauce. Discard remains of apple peel.

    Sauce
    3 cups apple juice from peelings--if not enough juice, add water or apple juice or apple cider
    1½ to 2 cups white or brown sugar, to taste
    3 tablespoons cornstarch
    ½ stick butter
    3 tablespoons lemon juice

    Combine sugar and cornstarch in saucepan. Stir in juice. Boil 3 minutes, stirring constantly. Add butter, remove from heat. Add lemon.

    Pour sauce over dumplings, return to oven and continue baking 15 minutes or till tender.

    Serve warm with ice cream or whipped cream. YUM!
