    1 cup cottage cheese
    1/2 teaspoon lemon zest
    1/3 cup lemon juice
    1/2 teaspoon vanilla extract
    3 egg yolks
    2 cups half and half
    3/4 cup sugar
    3 egg whites

    Recipe



    In blender or food processor, puree cottage cheese and lemon juice until smooth. Stir in pureed cottage cheese mixture. lemon zest, vanilla, and half and half; Set aside. In a medium bowl, beat egg yolks and sugar until smooth and thick. Set aside. In a medium bowl, beat egg whites until stiff but not dry. Fold into egg yolk mixture. Pour into ice cream canister. Freeze according to manufacturer's directions.
