    Now That's a Berry Crumble

    Good with blackberries , blueberries or raspberries.

    List of Ingredients




    2 cups fresh berries, about 10 ounces
    1/4 cup apricot preserves (or orange marmelade)
    2 Tablesp orange juice (Grand Marnier ain't bad, either)
    2 oz reduced fat Nilla Wafers (or more)
    butter or margarine
    1 cup plain yogurt, drained a bit

    Recipe



    Preheat oven to 375 degrees.

    Spray 4 ramekins with Pam. Set aside.

    Melt jam or marmelade together with juice or liqueur in a saucepan on the stove. Add berries and toss gently. Remove from heat. Add to greased ramekins.

    Crush cookies by putting into a plastic bag and beating with a hammer until they are COARSELY chopped. Top berries with the crumbs, covering fruit entirely. Add bits of butter or margarine on top.

    Bake at 375 degrees for 30 minutes or so. Serve lukewarm topped with the yogurt.
    (NOTE: I usually add a teasp. sugar and a drop or two of vanilla to the yogurt)
