    6 thin slices of fresh pineapple (1/4 or 1/3 of a fresh pineapple)
    2 Tbsp. sugar
    1 vanilla bean
    2 cups whole milk
    3 large eggs
    3 egg yolks
    ½ cup sugar
    2 Tbsp. all-purpose flour
    2 Tbsp. whipping cream
    Fresh blueberries (optional)

    Drain pineapple on paper towels. Butter a 9-inch quiche dish and sprinkle with the 2 tablespoons of sugar. Set aside.

    Cut the vanilla bean in half lengthwise. Combine the milk and vanilla bean in a heavy medium saucepan. Bring to boiling, remove from the heat, and cover; let mixture steep for at least 15 minutes. Remove the vanilla bean.

    Arrange the pineapple slices in the prepared dish in 1 slightly overlapping layer. Bake in a 325° oven for 5 minutes.

    In a large mixing bowl, combine the eggs, egg yolks, the remaining ½ cup sugar, flour, and whipping cream; blend until smooth. Gradually add the warm milk, a little at a time so as not to curdle the eggs. Pour the mixture over the pineapple. Bake for 30 to 35 minutes or until knife inserted near center comes out clean. Serve warm or chilled with fresh blueberries, if desired. Makes 8 servings.
