    1 lb. cottage cheese
    1 envelope unflavored gelatin
    or diabetic jello
    1 pkg. diabetic whip cream
    1 can crushed pineapple (no sugar syrup)
    1/2 c. pineapple juice
    1 tsp. liquid sweetener

    Combine cottage cheese, pineapple and sweetener. Heat
    pineapple juice and gelatin until hot. Let cool. Combine
    gelatin mixture with cottage cheese mixture. Fold in whipped
    cream. Chill at least 2 hours. Makes 8 to 10 servings.
