    2 cups of water
    2 cups of raisins
    2 cups of plain flour
    1 teaspoon of salt
    1 teaspoon of soda
    1 1/4 teaspoon of cinnamon
    1/2 teaspoon of nutmeg
    1 cup of unsweetened applesauce
    2 eggs
    4 tablespoons of liquid sweetener
    3/4 cup of Wesson oil
    1 teaspoon of vanilla

    Cook raisins in the water until water is cooked out; cool. Add applesauce, eggs, sweetener, oil and vanilla.
    Beat well. Sift dry ingredients together and add to applesauce mixture. Mix well. Bake in loaf pan sprayed with Pam for 1 hour at 350ºF.
